Ingredients (10 bites):
- 5 whole eggs
- 2 scoops of Belanac (egg white) protein powder
- 1 tbsp of greek yoghurt
- 1 cup of chopped spinach
- 1 cup of chopped red bell pepper
- 1/2 cup of crumbled feta cheese
- spices basil, oregano, lemon balm, black pepper, green pepper, himalayan salt, coriander
Instructions:
Prep the oven and muffin tin, preheat your oven to 175°C. Lightly grease a standard 10-cup muffin tin whilst finely chopping the spinach and red bell pepper. In a blender, combine the whole eggs, egg white protein powder, greek yogurt, and spices. Blend them all together until the mixture is frothy and well combined.
Transfer the liquid mixture to a bowl, gently fold in the chopped vegetables and the crumbled feta cheese using a spoon or spatula. Be careful not to overmix.
Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
Bake for 20–25 minutes, or until the egg bites are set, lightly golden brown, and fully cooked through. Finally, let them cool slightly before serving or storing for later. Enjoy!
